Introduction. Date press cake is a waste product of date juice making that can lead to potentially serious environmental problems if discarded in large amounts open areas. Therefore, it needs be utilized. Our study aimed investigate the possibilities using powder formulate innovative ready-to-eat products – vegan biscuits and protein bars.
 Study objects methods. The food under were subjected palatability test, nutritional value evaluation, texture profile analysis, scanning electron microscopy, as well microbiological assay performed during 8 months storage.
 Results discussion. test showed supplemented with 10% had best acceptable preference, compared control, 5 15% samples. bar scored highest overall acceptability, flavor, taste, texture, willingness buy, commercial bar. Overall, our both safe consume within months. Additionally, fortified high proportions recommended dietary allowances for most nutrients adolescents athletes, especially vegetarians.
